No Bake Plant-Based Bean Brownie

Switching to a plant-based diet can be quite tricky because you have to look for healthier alternatives of the food that you usually eat. But with the help of Dr. Edelita Jamis, a doctor who specializes in Lifestyle Medicine, she shares with us her Chocolate Bean Brownies recipe that surely tastes like your regular brownies.

Here are the ingredients that you will need:

  • 1 cup of cooked dark beans, drained (can be black beans, dark red beans, or kidney beans)
  • 2 cups of chickpea, drained and rinsed
  • 2 cups of walnuts
  • 1/2 cup of unsweetened Hershey’s cocoa powder
  • 8 Medjool dates (can adjust sweetness depending on preference; the less number of dates you use, the better)

Instructions:

  1. Place all ingredients into the food processor in this order: walnuts, chickpea, beans, dates, cocoa powder.
  2. Blend until you reach that smooth and brownie-like consistency.
  3. Transfer in a container then press and flatten the surface.
  4. Cut into small bite sizes. Best to refrigerate for at least an hour. Enjoy!
